The short answer
Choose the AI consulting firm in Dubai that advises and builds with the same team, can run the system privately when your data requires it, tests on your own Arabic and English documents, and puts the scope in writing before any work starts. A provider that cannot show you all four is a risk.

Start with the job, not the technology
Before you compare providers, write down one job you want AI to take on: reading mortgage files, answering patient enquiries, producing the monthly report. A good consultant will ask for this in the first conversation. A weak one will open with a list of models and platforms.
The job gives you a way to judge every proposal you receive. If a proposal does not say how that job will change for your staff, it is a technology pitch.
Seven checks before you sign
These are the questions we would ask if we were the ones hiring.
- Advice and delivery: do the people who write the plan also build the system, or is the build passed to another supplier?
- Data location: can the AI run on your own servers or in a UAE data centre if your sector requires it?
- Language: has the provider tested Arabic and mixed Arabic-English documents, on real files rather than a demonstration set?
- Scope: will you receive a written scope that names what is delivered, in what order, and what is needed from your team?
- Ownership: who owns the system, the prompts, the configuration and the data once the work is finished?
- Honesty: will the provider tell you which of your ideas are not worth doing?
- Handover: who trains your staff, and who looks after the system afterwards?
Why data location matters in the UAE
The UAE has a federal personal data protection law, and the DIFC and ADGM free zones have their own data protection regimes. Healthcare, financial services and legal work carry further rules from their regulators. A consultant working in the UAE should raise these in the first meeting, not after the build.
In practice this often means a private deployment: the AI runs on infrastructure you control, and your files are not sent to an outside provider. Ask each firm on your shortlist how they would do it.
Warning signs
Be careful with a provider who promises results before seeing your documents, who cannot say where your data will be processed, who proposes a large programme without a small first project, or who avoids putting the scope in writing.
